Puttu is traditional and filling breakfast paired with kadala curry. In olden days puttu was made in pieces of bamboo shell or in coconut shell. Now we get steel chiratta puttu maker, its a close adaption of this traditional method, with which chiratta puttu can be made in just 2 minutes. Here i trie...d out innovative puttu recipe, chicken chiratta puttu.

Ingredients

For Puttu
Rice flour 1 cup
Grated coconut 1 cup
Salt to taste
Water to sprinkle

For Chicken Masala

Minced Chicken 1 cup
Fennel seeds 2 pinch
Shallots 10-15 ( finely chopped)
Ginger 1/2 tsp ( finely chopped)
Garlic 1/2 tsp ( finely chopped)
Green chillies 3 slit lengthwise
Tomato 1/2 of 1 ( finely chopped)
Red chilli powder 1/2 tsp
Coriander powder 1/2 tsp
Turmeric powder 1/4 tsp
Garam masala 1/4tsp + 1/4tsp
Curry leaves 1 sprig
Salt to taste
Oil 2 tsp

Method

Chicken Masala

Heat oil in a pan, add fennel seeds, chopped ginger, chopped garlic and sauté for a minute.

Add the chopped onion and sauté till turns translucent, now add curry leaves, green chillies and turmeric powder, red chilli powder, coriander powder and 1/4 tsp garam masala and sauté till the raw smell goes, now add chopped tomato and sauté till it turns soft.

Add the minced chicken, salt to taste and let it cook thoroughly, it take 10-12 minutes. When it is almost done sprinkle 1/4 tsp garam masala to retain the aroma of spices. Once its done, let it cool down a bit in room temperature.

Puttu flour

Dry roast rice flour over medium heat, after about 5 minutes remove from the stove, and let it cool.

Add salt to 1 cup of water and wet the Puttu podi, a little at a time, and mix well till you reach bread crumbs consistency.

Cooking

Fill your pressure cooker with water till two thirds full. Place on the stove, take the chiratta kutti insert the flat disk with holes at the bottom.

Make a first layer with a table spoon of coconut, another layer with Puttu podi third layer with chicken masala one more layer with Puttu podi and sprinkle coconut on top.

Cover the chiratta Puttu kutti and place on the cooker steam vent once the steam start coming out.

Steam for 6 - 8 minutes, when the Puttu is cooked, steam will start coming through the holes on the lid. Remove the pot and open the lid.

Serve hot.
