Dates wine (ഈന്തപഴം വൈൻ)

Dates - 2 kg
Sugar - 1 kg
Citric acid - 25 gms
Water boiled and cooled - 4 liters + 2 liters.
Yeast - 1 tsp
Whole wheat – 1 tsp
Cinnamon – 1 stick
Clove – 4
Ginger – 2” piece
Cardamom - 4
Sterilize all the vessels before use.
Remove the seeds and boil the dates for ½ hour with 2 liters of water. Let it cool. Transfer it into a glass jar or ഭരണി with 4 liters of water. Add all the other ingredients into the jar. Keep the bottle airtight. Stir the mixture once everyday till 21 days. Then leave for another 7 days untouched until the fermentation complete. The next day strain the mixture using a muslin cloth into a dry vessel and keep it around 21 days for clear wine. Then you can store in clean dry bottles for years.
