MICROWAVE COCONUT CAKE

Maida – 2 cups
Baking pdr – 2 tsp
Butter – 1 cup
Powdered Sugar – 1 cup
Eggs – 3
Vanilla Essence – 1 tsp
Dessicated coconut – ¾ cup
Coconut milk – 1 cup

METHOD:-

Mix maida & baking pdr and sift. In a mixing bowl beat together butter, sugar & eggs till soft and fluffy. Add vanilla essence & dessicated coconut and mix well. Add flour and coconut milk alternately to this mixture and mix well, till a smooth batter is formed. Pour into a greased plate. Cook in the microwave on high for 5 – 7 minutes.
