Chocolate cake

Recipe Idea : Meera Manoj

This cake weighs 1.5 Kg.
For the basic cake:-

Flour _ 175 gram
Baking powder - 1 teaspoon
Baking soda - 1 teaspoon

Fine powdered sugar - 250 g (1 &3/4 cup and sieved)
Butter - 225 gram (Room temp)
Vanilla essence - 1 teaspoon
Salt - a pinch
Eggs - 4 (In room temp)

Cocoa - 50g (1/2 cup leveled and sieved)
Milk - 1 cup

How to:

In a heavy bottom bowl, mix milk and cocoa without lumps. Bring to boil it in a very low flame until it turns a semi thick paste. Later, let it cool completely. (It shouldnt be too thick when its cool)

Seive flour, baking powder and baking soda together and keep aside. (Thrice)

In a large and deep bottomed glass bowl, beat butter and powdered sugar for 15-20
minutes until soft and fluffy. Then add one egg at a time and just give a mix. Do not beat or over mix. Then fold in the flour mix and cooked n cooled cocoa mix alternatively until its finished.

Preheat the oven in 180d

Grease 9 inch baking tray and dust with flour. Pour the batter evenly in the tray.
Bake for 40 minutes in 180d.

When its done, transfer the cake tin into a wire rack and let it cool completely.

For decoration:

For crumb coat: (Butter cream icing)
Butter - 150g
Icing sugar - 2 cups
Cocoa powder - 3 table spoon.

Beat the above ingredients until light, fluffy and combined well.
Apply a thin layer of this icing and keep the cake in fridge for 15 minutes.

For ganache:

Fresh cream - 100 ml
Dark compound - 50g
Milk compound - 50g (Grate both the chocolates)

Boil fresh cream in a heavy bottomed bowl. When its bubbling, switch of the flame and add the chocolate and stir very well until its melted completely. Take out the cake from the fridge and pour the hot ganache on top. Sprinkle some coloured balls and some smilies and butterflies! 

I have doubled the quantity as i wanted a 3 Kg cake
