Vegetables with Yogurt( Curd and Coconut)

Recipe for 3 People
Preparation and Cooking time : 30 minutes

Ingredients:
1. Squash - 1/2 or Medium ( Peel the Skin and cut into Pieces)
2. Potato's -2 ( Chopped)
3. Baby carrots -15 or One Big Carrot ( Cut into Pieces)
4. Tomato -1 (Chopped)
5. Chick pea flour and rice flour - 1 tbsp each
6. Curd - 1 Cup ( Measuring Cup)
7. Green Chillies -2
8. Salt as per taste
9. Oil and Ghee - 1 tbsp each
10. Seasoning - Urad dal -2 tbsp , Cumin seeds -1/2 tbsp,Mustard seeds-1/2 tbsp and Broken red chillies -4
11. Curry leaves and finely chopped Coriander leaves

Method:
1. Pressure cook Squash , Potato and Carrots with little salt and Half glass Water.
We can use the water for cooking.

2. Grind Coconut, Green chillies and little salt.
3. Mix chickpea flour and rice flour in Curd.
Cool the cooked vegetables and mix in Curd along with Water.

4. Heat 1 tbsp Oil and 1 tbsp Ghee and Splutter Mustard seeds, Cumin seeds, Urad dal ,Red chillies and Curry leaves.
To this Seasoning add Curd Mixture along with Vegetables.
Cook on Medium high flame for 7 to 10 Minutes.
Stir in between to avoid burning.

Add 1 more glass Water . Add Water according to your consistency.
I added 1 and 1/2 glass Water for whole Recipe.

5. After 7 to 10 switch off the stove and add Coconut Mixture and finely chopped Coriander leaves.

Check for Salt and add accordingly.

Enjoy with Steamed Rice, Phulka or Chapathi.
