Malabar Kootu Curry

1. Vanpayar kuthirthathu- 2 cups
2.Kadala kuthirthathu- 1 cup
3.Pacha ethakaya- 1 
4.Chembu- 1
5.Carrot- 1
6.Mathanga- 1 medium slice
7.Coconut grated- 1 cup
8.Chilly powder- 2 tbsp
9.Turmeric powder- 1 tsp
10.Pepper powder- half tsp
11.Coconut oil
12.Curry leaf
13.Dry red chilly
14.garlic- 2 pods
15. Jeerakam- half tsp
16.mustard seeds

Cut all the vegetables and cook together with ingredients mentioned 1 and 2 along with 1 cup of water in a pressure cooker till the mixture becomes soft. It will take about 5 to 6 whistles. Once the steam goes, open the lid and with the help of a ladle mash the mixture lightly. Add enough salt. In the mean time grind together ingredients mentioned from 7 to 10 along with garlic and jeerakam/ cumin seed to a coarse mixture. Place a kadai add little bit of coconut oil and splutter mustard seeds,red chilly and curry leaves. To this add the coconut mixture. Roast it well till nice aroma comes out. Add this to the pressure cooked mixture and serve hot. If you want add little bit of coconut oil at the end. Tastes heavenly with rice or kanji.
