Masala Dosa with White Coconut Chutney

For Dosa batter.
Dosa rice(pachari )- 2 cups
Channa dal - 1/2 cup
Urad dal - 1 cup
Fenugreek seeds - 2 tsp

Soak this for 6 hours then grind with 1 cup cooked rice and water and leave to ferment overnight. Add salt and start making dosas by spreading them as thin as possible on a hot tawa. ( Sprinkle some water on the tawa to bring the temperature down and then wipe with a cloth or a cut onion / potato like I do.Then spread the batter.You will get more crispness and flavour this way.)
Mix a little oil / ghee to idli milagai podi( red chilli chutney powder) and spread on the top of the dosa.This is totally optional but it tastes awesome. Put the potato filling and roll it over.Take off the heat.

Potato masala filling
3 boiled potatoes chopped
Mustard seeds, jeera seeds
Urad dal - 1/2 tsp
Kayam - a pinch
1 big onion chopped
2 chillies chopped
Ginger chopped 1 tsp
Garlic chopped 1 tsp
Turmeric 1/2 tsp
Salt, Oil
Curry leaves and coriander leaves
To hot oil add mustard , urad dal and jeera seeds
Add onion,ginger,garlic ,chilli , curry leaves and mix well.Add the potato , mix and then add turmeric , kayam and salt.Mash this a little with the back of the spoon.Garnish with coriander leaves

Coconut chutney
Grated coconut - 1 cup
Green chillies - 5
Fried Bengal gram ( pottukadala) - 3/4 cup
Ginger - small piece
Garlic - 2 flakes
Salt to taste
Grind the ingredients together with a little water and season with the following ingredients
To season
Oil
Mustard seeds, curry leaves, urad dal , dried red chilli and asafoetida
