Mutton Biriyani...

Ingredients :- For Rice

Basmati Rice – 1 kg
Thinly Sliced Onion- 5 pieces
Sliced Tomato – 3 pieces
Ghee – as needed
Broken cashew nuts – 1/4 cup
dry grapes – 1/4 cup
Lime – 2 small
1.Green Chillies – 3-4 gm
2.Garlic – 50 gm
3.Ginger – 50 gm
Crush this 1,2 & 3.

Chopped Coriander leaves – 1 bunch
Chopped Mint leaves – 1 small bunch
Chopped Curry leaves - 2 sprigs

Ghee – as reqd

Garam Masala Powder – 3 tsp
Salt – as reqd

For Grinding
Green Chillies – 100 gm
Garlic – 50 gm
Ginger – 50 gm
Crush them together

For Masala
1.mutton cut into medium pieces – 1 ½kg
Onion – 2
Garlic – 6-7 cloves
Ginger – 1 big piece
Green chilli – 2-3
Tomato – 2
2.Red chilly powder – 1 ½ tsp
3.Turmeric powder – 1/2 teaspoon
4.Pepper powder – 1 teaspoon
5.Garam masala – 1/2 tsp
6.Curry leaves - 1 stirng

Mutton Preparation

Heat ghee/dalda in a pressure cooker. Saute onions till it becomes brown. Add ginger, garlic & green chillies & saute. Add tomatoes & stir. When tomato becomes soft add masalas (2,3,4&5). After 5 minutes add mutton pieces. Mix well. Add enough water & cook. 4 or 5 whisile is enough (as reqrd).

Rice Preparation

Wash and drain the rice well.Heat little ghee in a pan,and roast the rice for 4-5 mts.

Heat ghee/dalda in a pan(medium sized or as reqrd). Saute onions till it becomes brown. Add crushed ginger, garlic , green chillies , tomatoes ,Coriander leaves,Mint leaves & curry leaves to sauté. Add lemon juice and stir for 5 mintes. Then add 3 tsp garam masala and saute until oil seperates. Now add cooked mutton curry & mix well, and allow the chicken to cook well in medium heat,until all water is absorbed. Then add roasted Rice & add necessary water(Usually the measurement is like,for 1 cup rice – 2 cups water) and salt into it,cook rice till soft and all the water is absorbed. Cook the rice in a low flame.

Heat a little ghee in a pan and roast dry grapes & cashews and raisins till brown and keep it aside.Now add half of sliced onion and fry them until thay are well browned.Add more ghee /oil if needed.

Garnish with fried onions,nuts,grapes, Chopped Coriander leaves & Mint leaves.
