Ingredients:
Banana - 3 big ripe ones (I took robusta)
Butter: 100 gm
Powdered sugar - 1.5 cup
Atta/ wheat flour - 2 cups
Baking power - 1 tsp
Baking soda - 1 tsp
Salt - a pinch
Vanilla essence - 1 tsp
Cardomom- 2 powdered along with sugar(optional)
Dry fruits chopped - 1/2 cup
Pomegranate - 1/2 cup
Preheat the oven to 180 degree for 10 minutes.
Chop bananas to smaller pieces. Add butter , powdered sugar and cardomom and beat well with a hand mixer till smooth.
Add vanilla essence and mix well.
In another bowl, sieve out baking powder, baking soda and atta.
Add this to the wet mixture and mix well to form a dosa like batter.
Add dry fruits and pomegranate and mix well.
Grease the mould with butter. Add a layer of parchment paper. Now pour the mixture to 3/4th of the mould only. Bake at 180 degree for 45 min. At 30 mins, insert a tooth pick and check. If it comes out clean, cake is ready. Else continue baking till its done.
Cool the cake for 5 to 10 mins before demoulding and let it cool completely before making slices.
Enjoy with hot tea. :)
