Snowy Soft Rava Upma

Semolina/ Rava- 1 cup
Boiling water 3 cups
One big onion thinly sliced
Diced vegetables like carrot, string beans etc 1/4 cup
Sweet corn kernels-2 tbsp
Curry leaves- 1 sprig
1 dried red chilli, split
Mustard and urud dal -1/2 tsps each
Groundnut / cashew nuts - 2 tbsp
Ginger- a small piece finely chopped or crushed
Green chilly split 2 no's
Cooking oil or ghee( here used home made ghee)
Salt to taste…

Method of preparation

Fry the semolina ( Frying the semolina whether it is raw or roasted makes the upma soft) without oil for 5 minutes on medium to high flame. Transfer it to a plate. Wipe the pan and put it over a medium flame, pour oil/ghee and splutter mustard seeds. Add curry leaves, red chillies, urud dal, nuts, ginger, onion, green chilli and vegetables and salt. Stir well. Saute for 4-5 minutes. Add the fried semolina, saute again for a minute. Add boiling water in small portions and stir and let the semolina absorb it and turn soft and fluffy. Switch off the flame. You can garnish with chopped coriander leaves. Serve hot with curries of your choice or can have with sugar n banana.
