Rice Balls (Ariyunda)

Ingredients
Rice (Mattari) - 1 cup
Jaggery Powdered (Sharkkara) – 1/3 cup
Grated Coconut – 1/3 cup
Cardamoms Powder - 1/2 tbsp.
Ghee
Cashew nuts

Method
Step 1 : For preparing ariyunda wash the rice well and drain it.
Step 2 : In a heavy bottom pan dry roast the rice, till its pops out and it turns golden in color
Step 3 : Broke jaggery and keep aside
Step 4 : In a blender add fried rice and make a fine powder, blend all the fried rice ,remove and keep in a large bowl.
Step 5 : In the same mixer jar add broken jaggery and blend it.
Step 6 : Add grated coconut into the blender and mix well
Step 7 : Remove the jaggery coconut mixture from the blender and mix well together with the roasted rice powder
Step 8 : Grease hand with little ghee and make small rice balls and keep the splitted cashew nut on top.

Note: I make 16 Ariyundas from this recipe.
